Gluten-Free Strawberry Cupcakes

What did I do with those beautiful strawberries? I made the gluten-free strawberry cupcakes that Joy raved about in her post yesterday. After seeing the recipe, and how easy the ingredients are to throw together, I knew I had to make them. Not just because I’m currently gluten-free, but because they looked like the perfect Spring treat! And they are.

I made them before going out to dinner with my boyfriend last night, and when we got home, I couldn’t wait to bite into one. I stood at the kitchen counter with a glass of milk and devoured it.

I’m not one of those people who wish that healthy food tasted like junk food. I actually prefer what most people consider “healthy tasting food.” But of course, that does not mean I don’t also love healthy food that tastes naughty! If you’re one of those healthy-food-in-disguise kind of people, this is the treat for you. Coconut flour, agave nectar, and no oil or butter! It amazes me how moist and delicious these are with no gluten or fat. It’s time to go take some to the family! I’m so lucky I live so close to the people I love. Or…maybe they’re the lucky ones for living so close to me. I think the latter.

I’m not a fruit for breakfast type of girl. This was just a palate opener. It’s time for me to go make my real breakfast now, and then hit the gym. Cardio is calling my name. I haven’t had a good sweat since…Monday? Gasp! Tonight I’m having my best friend over at my new apartment (she hasn’t seen it yet!) and I’m going to make her dinner. I have a new goal to try and tackle at least one recipe (be it 2 ingredients or 20) every day.
